Burritos Gone Bananas
Yield: 4 burritos

Bananas, nut butter and agave nectar rolled up into a neat little package. They can be made a day ahead and stuffed into lunch boxes or served as a high-energy after school snack.

1/2 cup nut butter
1 tablespoon agave nectar or unfiltered honey
4 sprouted whole grain tortillas
1 banana, thinly sliced
1 tablespoon flax or sesame seeds

Cream together the bananas and agave nectra in a small dish.

Turn the burner (gas or electric) to medium heat. Place a tortilla onto the burner, flipping after 10 seconds or so, until the bottom is slightly browned and the tortilla starts to soften. Flip and repeat on the other side. Repeat with the remaining tortillas.

To assemble, spread each tortilla with an equal amount of the nut butter. Top with the banana slices and sprinkle with the seeds. Roll and serve.
