
Dandy Spring Salad
Dressing
1/4 cup olive or walnut oil
1 tablespoon apple cider vinegar
2 teaspoons maple syrup
1 tablespoon Dijon mustard
1/8 teaspoon dry mustard
Pinch sea salt
Salad
3 cups spring greens
1 cup young dandelion leaves
1/2 cup grated carrot
2 tablespoons toasted sunflower seeds
Dandelion petals (for garnish)
In a small jar, combine the oil, vinegar, maple syrup, Dijon, dry mustard and salt; shake well.
Toss the spring greens and dandelion in a large bowl. Add the carrot. Drizzle with the dressing, toss the salad and sprinkle with the seeds and dandelion petals.
