
Fava Bean Dip
Yield: about 1 1/2 cups
Fava's sweet, springy flavor with the richness of caramelized onion and garlic creates this simple, Mediterranean-inspired dip: perfect for any springtime party or potluck.
2 pounds fresh fava beans (in pods)
2 tablespoons olive oil
1 yellow onion, thinly sliced
6 garlic cloves, minced
salt and pepper, to taste
Olive oil and cilantro (for garnish)
Remove the beans from their pods, leaving the skins intact. Place the beans in a large saute pan with just enough water to cover the beans. Simmer until the beans are tender, about 15 minutes, adding more water if needed.
Remove the beans and any excess water from the pan. Place the pan back onto the stove over medium-low heat. Heat the olive oil in the pan and add the onion, cooking for 30 minutes, until the onions start to release their sugars and turn a caramel color. Add the garlic and cook for 1 more minute.
Throw the beans (with the skins) and onions into a food processor or blender and puree until smooth. Add salt and pepper until the flavors pop out. Chill.
Scoop the dip into a decorative dish and garnish with a drizzle of olive oil and a sprig of cilantro. Serve with toasted pita wedges, chips or crackers.
