
Israeli Salad
Yield: 4 -6 servings
Local, seasonal heirloom tomatoes are the best for this salad. Choose a variety of reds, oranges and yellows to make this salad stand out.
4 medium heirloom tomatoes, diced
1 large cucumber, diced
1/2 red onion, diced
Juice of 1/2 lemon
3 tablespoons olive oil
salt and pepper, to taste
1/4 cup parsley, chopped
Mix all of the ingredients in a large bowl. Let sit 10 minutes to allow the flavors to develop. Serve room temperature.
