Japanese Formula
Yield: about 1/4 cup

2 tablespoons soy sauce
2 tablespoons mirin (rice wine)
1 teaspoon toasted sesame oil
1-2 tablespoons garlic-ginger paste
2 scallions, thinly sliced
3 tablespoons minced cilantro
2 teaspoons sugar
1 teaspoon hot red pepper oil or pinch red pepper flakes

Mix the ingredients in a large bowl and add meat and vegetables for stir-frys, Asian noodles, soups and potstickers.
