
Marinated Baby Artichokes
Yield: 4 side servings
12 baby artichokes
Juice of 1/2 lemon
6 cloves of garlic, minced
1/2 cup parsley, chopped
1/4 cup olive oil
1/8 cup white wine vinegar
Salt and pepper, to taste
Peel and trim artichokes down to the tender leaves, leaving stems intact. Cut into quarters and place in some water with the lemon juice to keep them from browning.
Steam artichokes with the lemon water until tender, about 10-12 minutes. Combine with garlic, parsley, olive oil, vinegar, salt and pepper. Will keep in the refrigerator for 2 weeks.
