Pineapple-Date Salad with Mint

Serves 4-6

This sweet, simple, summery salad couldn't be more refreshing. Using only fresh pineapple, dates, coconut and mint, it offers simple elegance with bright flavor and flair. With a ripe pineapple, it shouldn't need anything more, but agave nectar or cane syrup can be added if the fruit is tart or out-of-season.

4 cups diced fresh, ripe pineapple
1 cup chopped dates
1 cup shredded coconut
1/2 cup minced fresh mint leaves, plus a little more for garnish

Toss all ingredients in a large bowl. Serve room temperature or chilled. Top with mint leaves for garnish.
