
Spinach and Smoked Turkey Salad with Cherries
Yield: 4 servings
Honey Balsamic Vinaigrette
2 tablespoons good quality balsamic vinegar
1 tablespoon stone-ground mustard
2 teaspoons honey
1/4 teaspoon salt
freshly ground pepper
1/3 cup extra-virgin olive oil
Salad
1/2 cup fresh cherries, halved and pitted
1 bunch or 4 handfuls spinach, washed
1 cup smoked turkey, cut into 1/2-inch cubes
1/4 cup diced green onion, some green included
1/4 cup crumbled feta cheese
1/4 cup chopped toasted walnuts
For the vinaigrette, whisk all but the olive oil in a small dish. While whisking, slowly drizzle in the oil. Let sit at least 10 minutes to allow the flavors to develop.
Coat the cherries with 1 tablespoon of the vinaigrette.
Toss the spinach, turkey cubes and green onions in a large salad bowl with the remaining vinaigrette. Arrange the greens on individual plates and decorate with the feta, walnuts and marinated cherries.
